Hot Dog Casserole

Potatoes create a base for this classic combination of hot dogs and condiments.

Ingredients

cups water
2
tablespoons butter or margarine
1/2
teaspoon salt
1/3
cup milk
1
cup Betty Crocker® Potato Buds® mashed potatoes (dry)
1/4
cup sweet pickle relish
2
tablespoons mayonnaise or salad dressing
1
tablespoon instant minced onion
2
teaspoons yellow mustard
4
to 6 hot dogs

Directions

  • 1 Heat oven to 350ºF. In 2-quart saucepan, heat water, butter and salt to boiling. Remove from heat. Stir in milk and dry potatoes just until moistened. Let stand about 30 seconds or until liquid is absorbed; whip with fork until fluffy. Stir in relish, mayonnaise, onion and mustard. Spread in ungreased 1-quart casserole.
  • 2 Cut each hot dog lengthwise in half, then crosswise in half. Arrange hot dog pieces around edge of mashed potatoes.
  • 3 Bake uncovered 25 to 30 minutes or until center is hot.

If you're in a super-big hurry, simply make mashed potatoes and stir in all ingredients, including hot dogs that have been cut into 1-inch pieces.

I bought a Betty Crocker Cookbook when I got married 39 years ago. (And still use it) It had the same recipe except I made real mashed potatoes. I have made it several times over the years. It is very tasty and not expensive to make. Tastes like potato salad mashed up. This one is a winner!

I made this for my husband, he's a huge hot dog fan. He really liked the mashed potatoes, I added shredded cheddar cheese and crumbled bacon on top.

It was a very filling recipe, I made the recipe as stated didn't look like enough, so I doubled it which meat doubling the relish and I tasted more relish than anything. I added shredded cheese to it during the last 10 minutes of cooking and it perked it up a bit. When I make it next time I will again double recipe, add cheese, use less relish and more hot dogs and maybe have a vegetable with it. All in all a pretty good recipe.
