I absolutely LOVE this cheesecake and have made it at least 6 times now. It has an eggnog taste and I think that it's perfect for the holidays. If you have never made a cheesecake before, let me tell you= It takes time and patience! Dont forget about the time it takes to soften the cream cheese too. I did try making this sugarfree once using Splenda, since my hubby is diabetic, but it was TERRIBLE. I always bake my cheesecakes on the middle rack of the oven and place a 13x9 metal pan, with about 1 inch of water in it, on the bottom rack below the cheesecake and DO NOT open the oven door while baking. Be sure to follow steps 3 & 4 completely. I also line the bottom of my springform w/parchment paper so that the crust doesn't stick the the bottom of my pan. (just pop the bottom out, cover with paper and pop back in- tear away the extra paper around the outside) This recipe will be one that I hand down to my daughter.

there is another recipe similar that has the rum sauce with real rum the name of the cheese cake is hot buttered rum cheesecake with brown sugar rum sauce. make this for freinds often they love it.

My mom has used this recipe ever since we found it in a Betty Crocker lil booklet that we picked up at some grocery store. We LOVE IT! Every Christmas she makes it and it's almost like a tradition now that it's been abut 4 years I think. It's rich but not too sweet. And the sauce that we use came from the booklet but...we have yet to find it here online to go with it. But you can find butter rum sauces all over. She looses the book all the time so you KNOW this is in my recipe box. I would suggest using real rum though if it says flavoring, it adds a tad bit more kick to it. It's an awesome Cheesecake for Holidays, or whenever!

My recipe came from the "Fall Baking" magazine you buy at the store. That recipe was a tad different - graham cracker crust, actual rum not extract and golden raisins vs. pecans. I would make this again, it was good. The rum was not over powerful and that is what makes this different and delightful. I made this on Thanksgiving, my only cheesecake I served. And for someone that makes different cheesecakes A LOT, like myself, this is worth the making.

I am the cheesecake maker in my family, they all love my creative creations so I thought that this one would be a huge hit for thanksgiving...I was wrong. It was AWEFUL! I took one bite and couldn't even swallow it. The other cheesecakes I made came out wonderful, so I now I didn't miss something. Oh, but my goodness was this horrible. I think that the imitaion rum extract was the culprit. My advice, if you want to try, don't do it for a holiday family dinner.

I am not a big fan of cheesecake, but this one was very good especially with the toasted pecans and caramel sauce. Very yummy! I plan to make this again soon.
