Honeycomb Candy

A favorite recipe of my childhood. My mother would make it every Christmas. I have updated it by topping with chocolate.

cup sugar

cup dark corn syrup

tablespoon vinegar

tablespoon baking soda

cup semisweet chocolate chips

teaspoons shortening
  1. Line a 8- or 9-inch baking pan with foil, extending the foil over edges of pan. Spray with non-stick cooking spray; set aside.
  2. In 2-quart heavy saucepan combine sugar, corn syrup and vinegar. Cook and stir over medium heat until mixture boils. Clip a candy thermometer to side of pan. Reduce heat to medium low; continue to boiling at a moderate steady rate, stirring occasionally, until the thermometer reaches 300°F.
  3. Remove from heat. Quickly stir in soda; mix well. Pour into pan. Do not spread as candy will spread itself. Cool 30 minutes. In small bowl, combine chocolate chips and shortening. Microwave on High for 1 minute, stir smooth. Spread over candy. Place in freezer, for 10 minutes or until chocolate is set. Cut into pieces.
