EXPERT TIPS

Expert Tips

Pound cakes freeze beautifully! Wrap the unfrosted cakes tightly, label them and freeze up to 4 months. To serve, loosen the wrap and thaw at room temperature 2 to 3 hours.

You’ll want to toast and chop extra walnuts for sprinkling on top of the warm glaze.

I loved the idea of honey and walnuts to doctor-up a cake mix, but was dissappointed with the result. I knew I should have added that old cake mix stand-by: vanilla extract (a tsp.full will do) to minimize the boxed mix taste, but I did not. I may try this again, but will def. do two things: 1)add 1tsp. vanilla extract to the blend ingredients, and 2)use a long knife to the cooled product to make slashes every so often so the icing can soak-in. This pound cake really needs BOTH these fixes to work, and even then...
