This is a super easy recipe. The chicken was so tender and juicy after marinating in buttermilk for a few hours. I ran out of the honey nut cereal so I had to bread 2 pieces of the chicken in Crispex, which wasn't too bad. I enjoyed the sweetness of the honey nut cereal, but you can easily use plain Cornflakes, Crispex, or breadcrumbs instead.

I loved marinading overnight with buttermilk and buttermilk substitutes like sour cream thinned out with milk. It made the chicken very moist and tender. However, using the branded cereal was far too sweet and I won't be doing that again. In future, I'll probably use plain cereal flakes or bread crumbs.

I substituted the buttermilk for skim milk, and I used Fiber One Honey Cluster cereal. I also mixed a little Applewood Smoked BBQ rub in with the Bisquick mix. It was amazing!
