Honey Nut Crunch Brownies

Ingredients

Brownies

box (1 lb 2.4 oz) Betty Crocker® Original Supreme Premium brownie mix
Water, vegetable oil and egg called for on brownie mix box
2
cups miniature marshmallows

Filling

1/2
cup light corn syrup
3
tablespoons butter or margarine
1 1/3
cups (8 oz) peanut butter chips
1 1/2
teaspoons vanilla
1
bag (8.75 oz) Chex Mix® honey nut snack mix

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 9-inch square pan with shortening or cooking spray. Make brownies as directed on box--except after removing from oven, immediately sprinkle with marshmallows. Bake 1 to 2 minutes longer or until marshmallows just begin to puff.
  • 2 In 3-quart saucepan, heat corn syrup, butter, peanut butter chips and vanilla over medium heat 3 to 4 minutes, stirring constantly, until chips are melted. Remove from heat; stir in snack mix. Spread evenly over marshmallows. Refrigerate about 45 minutes or until firm. For brownies, cut into 5 rows by 5 rows.

For easier cutting, instead of greasing or spraying pan, line pan with foil, allowing some to hang over sides, and prepare recipe as directed. Before cutting, lift brownies out of pan by foil edges, peel foil away from sides, and cut brownies.

This dish is RICH. In fact, too rich. Aside from that, the brownies themselves are delicious (made ours with the pouch of Hershey syrup), but the topping was not good at all, and will end up scraping it off for the brownies. Something about the combination of Chex mix, peanut, and marshmallows, although sounding good, is not good in practice. Will not make again.
