Honey-Cardamom Mixed Nuts

Ingredients

  • 1/4 cup honey
  • 2 tablespoons butter or margarine, melted
  • 3/4 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 2 containers (10 ounces each) deluxe salted mixed nuts without peanuts

    Heat oven to 275°. Spray jelly roll pan, 15 1/2x10 1/2x1 inch, with cooking spray. Mix all ingredients except nuts in large bowl. Add nuts; stir to coat.

    Spread nuts in pan. Bake 45 minutes, stirring every 15 minutes. Cool in pan, stirring occasionally.

  • You can use a combination of whatever salted nuts you have. Almonds and cashews are especially elegant and are very nice together.
  • These spiced nuts are great to serve at a party at home or away, or to give as a special gift. Package them in a pretty jar or in their own serving dish, then add a bow and a copy of the recipe to present to the recipient.
  • Cardamom is known for its spicy sweet flavor and pungent aroma. It's used extensively in Scandinavian and East Indian cooking.
