Ingredients

large tomatoes, seeded and chopped (3 cups)

small green bell pepper, chopped (1/2 cup)

garlic cloves, finely chopped

medium green onions, sliced (1/2 cup)
2
tablespoons chopped fresh cilantro
1
tablespoon finely chopped jalapeño chili

to 3 tablespoons lime juice
1/2
teaspoon salt

  • 1 Mix all ingredients in glass or plastic bowl.
  • 2 Cover and refrigerate until serving.

To seed a tomato, cut the tomato crosswise in half and squeeze each half gently over a bowl to remove the seeds.

I have been making this for years, and at times have added just a little sugar, it just gives it a little sweetness that adds a little extra from time to time, nice to change it up sometimes.

I have been making this for several years now and love it! It's soo fresh and crisp. We can't get enough of it, especially when it sits overnight in the fridge. Very flavorful! On taco night during the summer my family and I top our tacos with this as well.

I also add yellow onion and a serrano. I chop the tomatoes, bell pepper and onion in an onion chopper to get the perfect little squares. To finely chop the jalapeno, serrano, garlic, and clilanto I use a food processor. Sqeeze some lime and add some salt... mmm!!! I can't show up to a bbq without this!
