Directions

1 Peel and cut the potatoes in thin strips.
2 In a large bowl, mix water and salt together. Put the potatoes in it. Leave the potatoes in the salt water for five minutes.
3 Heat the oil in a large frying pan on high heat. When the oil is hot, drain the potatoes and fry them.

These turned out very good! I used red potatoes so they were a bit small, i also sprinkled parmesan cheese on top for some extra flavor. I used olive oil because thats all i had and that worked well.
