Homemade Blueberry Pie

sweet and tart old fashioned blueberry pie. Tastes great warm with vanilla ice cream and as a cold mid afternoon snack to awaken the senses. Goes best with my homemade double pastry crust

cup sugar

tablespoons cornstarch

teaspoon salt

teaspoon ground cinnamon

cups blueberries

double sided pastry crust (or two storebought crusts)

tablespoon butter

teaspoons lemon juice
  1. preheat oven to 400 degrees F
  2. mix sugar, cornstarch, salt, and cinnamon; sprinkle over blueberries and mix well
  3. line dish with pie crust and pour berry mixture into crust
  4. melt butter and mix with lemon juice; pour over berries
  5. cut remaining pastry into 1/2 - 3/4 inch wide strips for lattice top; weave strips over top of pie (if using a storebought frozen crust, thaw completely and cut into strips before removing from pan to place on top of berries)
  6. crimp and flute edges; cover rim with aluminum foil
  7. bake on middle rack for 50 minutes or until crust is golden brown
