Great recipe I use variations on often as it is so easy & quick. I usually brown hashbrowns and follow directions, sometimes I shred the zucchini & wring it out a bit. I often add low fat sour cream or cream cheese(maybe w/chives or not)to the eggs & sprinkle any grated cheese over the top at the end so it just melts. I have varied it with spinach and usually add sliced fresh mushrooms with either spinach or zucchini. It's good with bread sticks or warm tortillas & salsa or guacamole.

Sounded good and to easy to be true, when they mentioned to seed the tomatoes they weren't kidding. I didn't seed my tomatoes and it turned out to be mush, the potatoes didn't brown. I did the eggs seperately and I'm glad I did, 1 good thing though, this was the first time my husband and I had zucchini and I loved it I can't believe what I was missing, going to have zucchini more often, but not this recipie.

I haven''t made your recipe yet but have made my own version with sausages that have been browned & cut into bite size pieces & added to other ingredients. I would think that you would also make it tasty with bacon added if you wish. Sometimes I also add a can of warmed up chili beans to be a little different. Also we like mushrooms so I put some of them in also.

The directions don''t really match the title of the recipe. "Scrambled eggs" imply slow cooking over low heat to allow the curd to develop, with repeated lifting to keep the eggs light and moist. That''s a bit cumbersome with all of the veggies and taters in the pan. Letting the eggs sit in the pan til cooked through would make this a frittata, and it would be a bit easier to get cooked through in a low oven after the veggies prep and egg addition on the stove.
