cup extra-virgin olive oil

medium cloves garlic, chopped

cups finely chopped yellow onions (2 small)

cup diced celery (2 medium stalks)

cup diced carrots (2 medium)

tablespoon finely chopped fresh rosemary or thyme leaves

can (15 oz) Progresso® cannellini beans, drained
1 1/2
cups Muir Glen® organic diced tomatoes, undrained (half of 28-oz can)
4
cups diced green or yellow zucchini (5 small)
1
cup uncooked tubetti pasta or other small tube pasta (4 oz)
2
cartons (32 oz each) Progresso® reduced-sodium chicken broth
Salt and freshly ground black pepper, if desired

cup shredded Parmesan cheese
  • 1 In 6-quart stockpot, heat oil over medium-high heat. Add garlic; cook and stir until garlic begins to brown. Stir in onions, celery and carrots; cook 8 to 10 minutes, stirring occasionally, until vegetables are tender.
  • 2 Stir in rosemary, beans, tomatoes, zucchini, pasta and broth. Heat to boiling. Reduce heat; cover and simmer about 20 minutes or until pasta is tender. Season with salt and pepper. Serve with cheese.

Or set up an impromptu table in front of the fireplace. You don’t have to have a lot of space to make the setting interesting. I really wanted to like this, but it just didn't taste quite right. There wasn't enough broth and it tasted too much like plain water. The only tastes that really did come through were the seasonings, which felt too overpowering (especially the fresh thyme). This isn't the worst minestrone I've ever had, but I can't see myself making it again. It just wasn't very appealing.

I have made this soup many times.. I love it..I put alot of grating cheese right before I heat it up. That makes the soup!!! I used basil instead of the thyme or rosemary..that is just as good. This is one of my favorite recipes.

This was excellent, the next day, Had some Hot Italian sauage left over and added to it and it was great. Nice crusty bread and you have a meal
