Home made spaghetti sauce

This is a way to use all your fresh tomatoes, basil, onions, etc., from your garden. No jarred sauce can beat this and you won't ever want to use a jar again.

Ingredients

medium fresh tomatoes
1
medium white onion

sprigs fresh basil
1
tablespoon oregano
1
teaspoon salt
1
teaspoon pepper
2
teaspoons sugar
1
quarter cup extra virgin olive oil

Directions

  • 1 Put olive oil in frying pan. Quarter your tomatoes and place them in the frying pan then cover with onions, basil and spices.
  • 2 Cover and simmer on a very low flame for 2 to 3 hours. The longer you can stew them the better the taste.
  • 3 Serve over pasta or hot garlic bread. Sprinkle top with cheese.
  • 4 After tasting home made sauce made from your garden tomatoes you will never go back to jarred sauce!

The recipe is not explicit enough when it comes to directions for preparing the onions (what method of chopping, mincing, etc.)Also, I cooked the tomatoes with the skins on because it merely stated to quarter them. I think you should remove the skins prior to cooking.
