I modified this recipe to be gluten free. I used the Gluten Free Sugar Cookie recipe and added the coconut and white chocolate chips....and icing. I am so excited that i "created my first Guten Free Cookie " recipe. Absolutely Delicious.....

I forgot to put the coconut extract in the cookies. You could barely taste the coconut. The white chocolate flavor was great!

I just tasted one of these right after I took them off the cookie sheet - haven't drizzled the white chocolate on them yet - and I can guarantee they are going to be added to my annual cookie list. I think I have made my last batch of cookies from the book - these sugar cookie mix recipes are THE BEST THING SINCE SLICED BREAD!

I make these every year,and everyone loves them! My sister BEGGED for the recipe. I personally find the frosting too sweet,so make half the batch w/o it.Also,the topping comes out too thick,so i either just add the chips to the cookie and forget the frosting(still sprinkle though),or I buy those easy-to-melt chips in the bulk section at my grocery store.

My new favorite Christmas Cookie. Something about the combination of the white chocolate and the coconut is delicious. You could make them year round, but I save them as a Christmas treat.
