Herbed Chicken and Stuffing Supper

Come home to a nicely seasoned one-dish meal of herbed chicken and delicious vegetables.

Ingredients

  • 3 pounds bone-in chicken pieces, skin removed
  • 1 can (10 3/4 ounces) condensed cream of chicken with herbs soup
  • 4 sweet potatoes or yams, peeled and cut into 1/2-inch slices
  • 1 package (6 ounces) stuffing mix for chicken
  • 1 1/4 cups water
  • 1/4 cup margarine or butter, melted
  • 1 cup frozen (thawed) cut green beans

    Place chicken in 5- to 6-quart slow cooker. Spoon soup over chicken. Top with sweet potatoes. Mix stuffing mix, water and margarine; spoon over sweet potatoes.

    Cover and cook on low heat setting 4 to 6 hours or until potatoes are tender and juice of chicken is no longer pink when centers of thickest pieces are cut.

    Sprinkle green beans over stuffing. Cover and cook on low heat setting 15 to 20 minutes or until beans are tender.

    The stuffing mix for chicken is the already-flavored bread crumb mixture that comes in a box. All the seasoning are included, and you just add the water and the butter--it's that easy! You can use your family's favorite chicken pieces, such as legs, thighs, breasts or a mixture of all three, so everyone gets his or her favorite "pick of the day."

    The herbs in the cream of chicken soup make a nicely seasoned one-dish meal. You also can use your favorite cream soup, such as golden onion or broccoli.

    We like to add the green beans at the end of the cooking time so that they keep their green color and have more texture. But you don't have to; you can add the green beans with the sweet potatoes, but they will be softer in texture and a lighter green color.
