pound bulk pork sausage or chorizo

each onion, chopped

cups frozen shredded hash browns
1
can RO*TEL Diced Tomatoes & Green Chiles, drained
1/2
pound VELVEETA Pasturized Prepared Cheese Product, cut into 1/2=inch cubes

tablespoons water
  1. Heat oven to 375^
  2. Brown sausage/chorizo in large ovenproof skillet sprayed with cooking spray on medium heat; drain.
  3. Return sausage/chorizo to skillet. Add potatoes and tomatoes; stir. Cook 5 minutes; stir.
  4. Top with VELVEETA.
  5. Whisk eggs and water until well blended: pour over ingredients in skillet.
  6. Bake 20-25 minutes or until egg mixture is set in center and VELVEETA is melted. Let stand 5 minutes before serving.
