Just as the title indicates, this hearty breakfast is great to freeze and use in a pinch.

Ingredients

1/2
pound bulk pork sausage or chorizo
1
each onion, chopped
2
cups frozen shredded hash browns
1
can RO*TEL Diced Tomatoes & Green Chiles, drained
1/2
pound VELVEETA Pasturized Prepared Cheese Product, cut into 1/2=inch cubes
6
each eggs
2
tablespoons water

Directions

  • 1 Heat oven to 375^
  • 2 Brown sausage/chorizo in large ovenproof skillet sprayed with cooking spray on medium heat; drain.
  • 3 Return sausage/chorizo to skillet. Add potatoes and tomatoes; stir. Cook 5 minutes; stir.
  • 4 Top with VELVEETA.
  • 5 Whisk eggs and water until well blended: pour over ingredients in skillet.
  • 6 Bake 20-25 minutes or until egg mixture is set in center and VELVEETA is melted. Let stand 5 minutes before serving.
