tube pork chorizo

onion, chopped

cups frozen shredded hash browns

can diced tomatoes and green chilies, drained
1/2
pound Velveeta, diced into 1-inch cubes

  1. Heat oven to 375^.
  2. Brown chorizo in large ovenproof skillet sprayed with cooking spray on medium heat; drain. Return chorizo to skillet. Add potatoes and tomatoes; stir. Cook 5 minutes; stir. Top with cheese.
  3. Whisk eggs and water until well blended; pour over ingredients in skillet.
  4. Bake 20-25 minutes or until egg mixture is set in center and cheese is melted. Let stand 5 minutes before serving.
