Ingredients

tube pork chorizo
1
onion, chopped
2
cups frozen shredded hash browns
1
can diced tomatoes and green chilies, drained
1/2
pound Velveeta, diced into 1-inch cubes
6
eggs
2
tablespoons water

  • 1 Heat oven to 375^.
  • 2 Brown chorizo in large ovenproof skillet sprayed with cooking spray on medium heat; drain. Return chorizo to skillet. Add potatoes and tomatoes; stir. Cook 5 minutes; stir. Top with cheese.
  • 3 Whisk eggs and water until well blended; pour over ingredients in skillet.
  • 4 Bake 20-25 minutes or until egg mixture is set in center and cheese is melted. Let stand 5 minutes before serving.
