This is my go-to breakfast casserole. I adjust a bit, adding more cheese (3 cups), sausage (18 oz), cut down on the potatoes (2 cups) and add 2 eggs. I've also made it with chorizo and added tomatoes and was a huge hit.

Delicious! I made it the night before so followed the instructions for "Do Ahead Tip". 1 hour for that maybe too long, or cover after 40 mins, because the top was almost burnt it was so overdone. I added chopped peppers, onions & mushrooms.

Excellent brunch item! Was very easy to make and pretty tasty. My only complaint was that the onion flavor was too mild for my liking. When I make this again I will use a medium yellow onion, and also the green or red pepper (that is listed as an add on in the recipe) for more flavor. Thanks Betty!

This recipe was delicious and easy! Since I didn't have any swiss cheese, I substituted pepper jack cheese and it was good. I like recipes that allow for some variations. The next time I make it I will add more sausage - 1-1/2 lbs or 2 lbs.

This recipe was a real hit with the catering event that I did for a friend. It was also went over well with my family when we went camping. My friend who does not like any type of potato loved this dish and actually ate it.
