cup coconut

cup Bisquick Heart Smart® mix

cups fat-free (skim) milk

cup fat-free egg product
1 1/2
teaspoons vanilla

cup frozen (thawed) fat-free whipped topping, if desired

Directions

  • 1 Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In medium bowl, stir all ingredients except whipped topping with wire whisk or fork until blended. Pour into pie plate.
  • 2 Bake 50 to 55 minutes or knife inserted in center comes out clean. Cool 1 hour. Refrigerate 4 hours or until well chilled. Garnish with whipped topping. Store in refrigerator.

The newer recipes are different. As I remember, we used to mix the mix in a blender and they always came out perfect.

This is quite what I was expecting. The top baked up to a wonderful golden but the inside remained a little too moist and tasted very much of egg. If the top didn't bake to form a kind of crunchy layer, this "pie" would not hold its form at all.
