ounce Baby Spinach

White Onion
Milk

Red Bell Pepper

Green Bell Pepper

cup Mushrooms
1
Green Onion
1/2
cup Mozzarella Cheese
1
spoon Bisquick
Salt
Pepper
  • 1 Separate Egg Whites and Yolks into a GLASS bowl, throw away yolk
  • 2 Slice all vegetables (except green onion) to desired size
  • 3 Add all vegetables to egg whites
  • 4 Beat eggs and vegetables together, add milk to "taste" so that the egg is spread a little farther
  • 5 Grease pan or use a non-stick pan pour egg and vegetables in, and cover
  • 6 Cook over low to medium heat
  • 7 (Optional Step) Flip the eggs and cover
  • 8 Slice the green onion and set aside
  • 9 Cover half of the eggs in cheese and fold
  • 10 Cut in half
  • 11 Garnish the top with the green onions slices
  • 12 Salt and pepper to taste!

Expert Tips

Low heat may take a while, but it's worth it! if you brown the eggs and vegies a little it adds a lot of extra flavor!
