I made this for my husband's birthday yesterday. It is absolutely delicious!! Since I didn't feel that we needed so much sugar either, I took it a step further and used sugar free low fat ice cream and sugar free hot fudge and carmel. It was amazing, my husband said that it rivaled a store bought cake, actually he thought it is better. I did fancy it up just a little. Once I added the pecans to the final layer, I also drizzled it with some of the fudge topping and the carmel, so it not only tasted better than store bought, my husband said it was as pretty as any BR (Baskin and Robin) cake, also.

Yummy, however next time I would use a butter pecan or pralines and cream in place of the vanilla to add a little more flavor and crunch.

I made this for my kids birthdays. My husband's family loved it. They said it was better than a dairy queen cake. I must admit though I did not healthify it. I used regular ingredients. Also, I could not find chocolate wafer cookies so I used teddygrams. It was absolutely delicious. I will definitly be making it again.
