Ingredients

1/4
cup finely chopped red onion

tablespoons lemon juice
1/8
teaspoon black pepper
Dash salt

tablespoon olive oil
1
can (15 oz) Progresso® cannellini beans, rinsed and drained

cans (6 oz) very low sodium chunk white tuna, drained
1
cup cherry tomatoes, quartered
1/4
cup snipped fresh parsley
4
8-inch whole wheat flour tortillas
1/2
cup julienned carrot

  • 1 In a small bowl, combine red onion, lemon juice, pepper, and salt. Whisk in olive oil; set aside.
  • 2 In a large bowl, slightly mash beans. Add tuna, tomatoes, and parsley. Pour dressing over bean mixture; stir gently.
  • 3 Divide bean mixture among tortillas. Top with carrot. Roll up tightly. Serve immediately, or cover and chill for up to 6 hours.

This wrap was O.K. but I didn't think it tasted all that great- it didn't taste BAD but just not that great, and for something that's going to be over 300 calories, I would like it to taste a little better. I did use a different kind of beans because I didn't have the kind the recipe called for, but it was a kind of bean that I liked so I don't think that was why I didn't think it tasted all that great. Maybe after it chills for a few hours it will taste better. It was, however, suprisingly filling, so if I was just bringing this along with me for lunch with no sides or anything, this would be all I needed to eat.
