This recipe was a good way to get rid of some fresh spinach I had in fridge. It did get my husband to eat brown rice and veggies, but overall not a recipe I would remember or crave.

Just made this. I agree with the others on here.. it took me a little longer then expected to prepare, but it was well worth it. delicious! I think next time I will add more ham, or use this solely as a side to chicken or ham as others have recommended as well. will definitely be makin this again though :) thanks

This was a nice change for our family. The brown rice gave it a nice texture. I shredded the carrots just for the picky eaters. We will try this again.

I changed this recipe a bit and everyone went nuts over it. I didn't use any fat free or low free items though. I also added half a cup of diced red bell pepper, omitted the ham and mixed in a cup of monterey jack cheese and a half a cup of Parmesan cheese plus I tossed in a cup of French's fried onions I increased the water to two cups, intead of 1 3/4 cups. This was a huge hit and next time I make it I think I will add shredded chicken to it and make it a meal.

Overall, the recipe was ok. It took me quite awhile to prepare, and if I make it again, I plan to add more ham for more flavor. I may also add some corn and more onions, just for our preferences. My husband ate it, but also added Doritos on top for some crunch. I thought he was being weird, but then I gave it a shot and it wasn't bad, it just made a healthy meal unhealthy!

I made this dish last week for a dinner party with my family and best friend's family. We have both been looking for healthier food alternatives for ourselves and to get our kids and husbands to eat healthier as well. We both have 4 year olds that ate spinach for the first time - and even the husbands loved it. It did take a little time to prepare - but it was worth the wait. We made this and the Taco BBQ chicken and whole meal was ready and on table within an hour. I love this new healthified section - it is just what the doctor ordered.
