For years, I've used this pie crust recipe for all kinds of pies. Works well, although my top crust on two crust pies aren't pretty. I roll it out on parchment paper. I like a very "pumpkiny" tasting pie, so I use no evaporated milk ( plus this means less calories) and add one tablespoon dark molasses.

Very good recipe that works well with substitutions. I used sweet potatoes instead of pumpkin. Since I didn't have pumpkin spice I used ground clove and ground spice. I thought adding some of the spices to the dough for the pastry jazzed it up too. I "fattened" it up by using 2 whole eggs instead of the egg substitutes or just the whites.

Such a great recipe!! I felt good knowing that it was a little more healthy and my husband couldnt taste the difference. He would have never ate it if he knew it was "low fat."
