I made this bread today instead of a birthday cake, for myself. Only I had no whole wheat flour so used all white but added a scoop of vanilla protein powder, a box of chopped dates and lots of chopped walnuts! Love it! We ate almost a whole loaf right away. It made two but didn't take quite as long to bake as it said. Y U M M Y !!

I used splenda and 3 medium eggs and got it down to 121 calories per slice. Really great recipe! Would make great muffins. Also, it only took about 30 minutes to bake the bread and my oven is just electric (not convection or anything) so make sure you watch that or it'll burn.

I got this down to 98 calories a slice. I used splenda for the sugar. I used 1/2 cup ground flaxseed for 1/2 whole wheat flour. I also only used 1 cup all purpose flour and 2 cups whole wheat flour. I added about 1/2 cup raisins which I think really make it better. I also replaced the oil with the same amount of unsweetened applesauce. I was a little generous with the spices because I used applesauce instead of fat. It tastes really good this way and was moist enough. It only took about 50 minutes though in a convection over.

So Good! I used bleached flour (all I had) and I switched out Splenda for the sugar and made them into muffins. I brought them to work and everybody was full of "mmmmmmms" Perfect "healthy" snack.

This recipe is awesome. I had a Tan cheese pumpkin that I had froze last year in 16 oz containers. This made the bread moist and the smell was great! I'm taking it for Boss's day this Friday.
