Ingredients

cup granulated sugar
1/2
cup packed brown sugar
1/2
cup peanut butter
1/4
cup no-trans-fat 68% vegetable oil spread stick, softened

egg

tablespoons honey
1 1/4
cups Gold Medal® whole wheat flour
3/4
teaspoon baking soda
1/2
teaspoon baking powder
1/4
teaspoon salt
Additional granulated sugar

Directions

  • 1 Heat oven to 375ºF. In large bowl, beat 1/2 cup granulated sugar, the brown sugar, peanut butter and vegetable oil spread with electric mixer on low speed until well mixed. Beat in honey and egg until well blended. Beat in remaining ingredients until dough forms.
  • 2 Shape dough into 1 1/4-inch balls. Place balls about 3 inches apart on ungreased cookie sheets. Flatten in crisscross pattern with fork dipped in additional granulated sugar.
  • 3 Bake 7 to 9 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.

after my husband had a heart attack at such a young age, we had to start eating more healthy. he loves his peanut butter and i didn't want him to have to give that up so i came across this recipe and thought if its healthy it cant be good....well i guess i was wrong! these are AMAZING!! they are better then the original recipe...i followed it to a tee except for 2 things... i used chunky peanut butter and i put a chocolate star on top when they came out of the oven...cant give up everything....

Well these are a little tricky, I took them out before they looked done because they smelled done. I let them sit on the pan for a few minutes before I took them off the sheet. They are deff. missing that crunch that crunchy chewy that regular peanut butter cookies have. I would suggest adding something for a bit of crunch.Also they are more cake than a cookie but taste decent.

I baked these this afternoon. I made the following modifications: I used butter instead of the no trans-fat 68% vegetable oil spread (the stuff is mostly chemicals) I used 2 eggs (Betty Crocker tend to like their cookies DRY for whatever reason) I used Grade B maple syrup because I had no honey in the house. They came out light and soft. I'm going to make a second batch with white chocolate chips and I'll add vanilla to the next batch for a more decadent flavor.
