Ingredients

Salad

cans (15 oz each) Progresso® black beans, drained, rinsed

can (15 oz) Progresso® dark red kidney beans, drained, rinsed

can (11 oz) Green Giant® SteamCrisp® Niblets® no-salt-added whole kernel sweet corn, drained

cups grape tomatoes, each cut in half

cup chopped green bell pepper (1 medium)
1
cup chopped red bell pepper (1 medium)
1/2
cup sliced green onions (8 medium)
1/4
cup chopped fresh cilantro

Dressing

tablespoons white wine vinegar or cider vinegar

tablespoons canola oil

tablespoon chili powder

teaspoon salt
1/4
teaspoon pepper

  • 1 In large bowl, mix salad ingredients. In small bowl, mix dressing ingredients with wire whisk until blended.
  • 2 Pour dressing over salad; toss to mix. Cover and refrigerate at least 4 hours to blend flavors.

Tasty and great for a group gathering. I made this for a cook-out and everyone thoroughly enjoyed it. I took absolutely nothing home, the dish was washed and empty. I highly recommend this for home or functions. Only change I made was adding fresh garlic. Great dish:)

I love this recipe so much! I'm a college student and so my money situation is kind of tight this recipe is very wallet friendly and makes a LOT not to mention how easy it is to prepare. I Like to make this along with the Triple-Corn Squares with Bean Sauce, it makes a nice refreshing side salad to the sweet cornbread and beans. This Mexican Bean Salad also is great because the leftovers can be used as salsa on top of tacos, nachos, and omelettes.. the possibilities are endless!

I make this all the time,except in place of the tomatoes I use a cup of salsa and forget the sauce entirely. Its a favorite where ever i take it!
