I love this recipe. Instead of fussing with cooking the bacon I use the bacon pieces you find on the salad dressing aisle at the store. Very Tasty!

Had company for dinner when I served this & they just loved this! Has an awesome taste. You'd never know that this was "healthified". This will go in my recipe files as a favorite.

At first taste (just of the sauce in the pan) it's a little bitter and tangy, I added just a little bit more sugar, added some crushed red peppers and sprinkled on shredded cheese and I thought these were amazing! Had a nice homemade taste to it, and the potatoes were nice and creamy and still had that potato salad taste to it, but with a twist!
