Ingredients

cup granulated sugar
1
container (6 oz) Yoplait® Original 99% Fat Free French vanilla yogurt
2
tablespoons canola or vegetable oil
2
teaspoons vanilla
2
egg whites or 1/4 cup fat-free egg product
3/4
cup Gold Medal® all-purpose flour
1/2
cup unsweetened baking cocoa
1/2
teaspoon salt
Powdered sugar, if desired

Directions

  • 1 Heat oven to 350°F. Spray 8- or 9-inch square pan with cooking spray.
  • 2 In medium bowl, mix granulated sugar, yogurt, oil, vanilla and egg whites. Stir in all remaining ingredients except powdered sugar. Spread in pan.
  • 3 Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Cut into 4 rows by 4 rows. Sprinkle with powdered sugar just before serving.

I made these the first time by only substituting the sugar with splenda and simple switches like that. They turned out horrible. With the second batch I made, I added 2 tsp. of baking soda. They turned out amazing! So add 2 tsp. of baking soda to the recipe!

I have made these several times and find them to be delicious. I have taken them to work and all my coworkers thought they were good too. I like making a couple batches at one time and freeze them for later use.

The flavor is very good, but the texture is dense and very cake-like. I think that will take a bit of getting used to. I cut the pan into 18 brownies to fit more easily into my weight loss plan. The yogurt as a fat substitute is a great idea - much better tasting than applesauce or pureed prunes.
