medium sweet potatoes or yams, peeled and cut into 1/2-inch slices (about 2 cups)

can (8 ounces) crushed pineapple in juice, undrained

tablespoon packed brown sugar

tablespoons chopped pecans

tablespoon chopped crystallized ginger

teaspoon margarine
  1. Heat oven to 375°. Spray 1-quart casserole with nonstick cooking spray. Layer yams and crushed pineapple in casserole. Sprinkle brown sugar, pecans and crystallized ginger over top; dot with margarine. Cover and bake about 45 minutes or until yams are tender.
