Hawaiian Sausage and Rice Bake

Ingredients

  • 1 1/4 cups water
  • 2 tablespoons butter
  • 1 (6.2-oz.) pkg. fast-cooking long-grain and wild rice mix (with seasoning packet)
  • 1/2 cup pineapple preserves
  • 1 lb. cooked kielbasa, halved lengthwise, cut into 1-inch slices
  • 1 medium onion, finely chopped
  • 1 medium green bell pepper, cut into 3/4-inch pieces
  • 1 medium red bell pepper, cut into 3/4-inch pieces
  • 1 (8-oz.) can pineapple chunks in unsweetened juice, undrained

    Heat oven to 375°F. In small saucepan, bring water and butter to a boil.

    In ungreased 2 1/2-quart casserole, combine all ingredients including contents of seasoning packet and boiling water; mix well. Cover.

    Bake at 375°F. for 40 to 45 minutes or until rice is tender. Let stand 10 minutes before serving.

    Check the deli as well as the jam aisle to find pineapple preserves.

    Any variety of instant long-grain rice mix can be used in this casserole. Use a 6.2-ounce package. Apricot or peach preserves can be used in place of the pineapple preserves.

    To reduce the fat in each serving of this casserole by about 25 grams, use turkey kielbasa or smoked turkey sausage in place of kielbasa.
