Hawaiian Sausage and Rice Bake

Ingredients

  • 1 1/4 cups water
  • 2 tablespoons butter
  • 1 (6.2-oz.) pkg. fast-cooking long-grain and wild rice mix (with seasoning packet)
  • 1/2 cup pineapple preserves
  • 1 lb. cooked kielbasa, halved lengthwise, cut into 1-inch slices
  • 1 medium onion, finely chopped
  • 1 medium green bell pepper, cut into 3/4-inch pieces
  • 1 medium red bell pepper, cut into 3/4-inch pieces
  • 1 (8-oz.) can pineapple chunks in unsweetened juice, undrained

    Heat oven to 375°F. In small saucepan, bring water and butter to a boil.

    In ungreased 2 1/2-quart casserole, combine all ingredients including contents of seasoning packet and boiling water; mix well. Cover.

    Bake at 375°F. for 40 to 45 minutes or until rice is tender. Let stand 10 minutes before serving.

  • Check the deli as well as the jam aisle to find pineapple preserves.
  • Any variety of instant long-grain rice mix can be used in this casserole. Use a 6.2-ounce package. Apricot or peach preserves can be used in place of the pineapple preserves.
  • To reduce the fat in each serving of this casserole by about 25 grams, use turkey kielbasa or smoked turkey sausage in place of kielbasa.
