Ingredients

Old El Paso® flour tortillas for burritos (8 inch)
2
teaspoons fat-free mayonnaise
3
oz thinly sliced cooked ham, cut into strips
1
can (8 oz) crushed pineapple, well drained
1/2
cup chopped green bell pepper
1/4
cup finely shredded mozzarella cheese (1 oz)

Directions

  • 1 In 12-inch nonstick skillet, place tortilla. Spread with 1 teaspoon of the mayonnaise. Top with half of the ham, pineapple, bell pepper and cheese. Top with second tortilla.
  • 2 Cook over medium heat 2 to 4 minutes, turning once, until lightly browned. Remove from skillet.
  • 3 Repeat to make second quesadilla.

I find that if I moisten the outside of the tortilla with a little bit of butter spray, it adds a more golden color and a bit of crunch to the outside. Cheddar cheese is also very complimentary to the pineapple.

I find it much easier to use a huge tortilla, put the filling on one half and fold the other half over - much easier to turn as the filling doesn't fall out if you turn toward the folded end.
