Harvest Veggie Garden with Hummus

Ingredients

container (8 oz) plain hummus
1
large red bell pepper (cut into 1/4-inch strips)
1
carrot (1-inch diameter)
Parsley sprigs
1
large yellow bell pepper
Chives (cut into 1-inch pieces)
Broccoli and cauliflower florets
Brussels sprouts, steamed (1/2- to 1-inch diameter)

  • 1 To assemble garden: Spread hummus evenly onto rectangular serving platter. Place red pepper strips, cutting to fit, onto hummus to create garden borders.
  • 2 To make "pumpkins": Cut carrot into 1/2-inch slices. Using toothpick, poke a hole in side of each carrot; insert 1 small parsley sprig into each carrot for leaf. Stand pumpkins on end in one garden section.
  • 3 To make "corn cobs": Cut 1-inch pieces of yellow bell pepper; place in the second garden section. Place chive pieces on sides of each corn cob for husks.
  • 4 Place small broccoli and cauliflower florets in the third garden section and Brussels sprouts in the fourth section.
