You'll fall in love with these pumpkin bars! They have a light texture, are full of cinnamon, ginger, raisins and nuts and are topped with cream cheese frosting.

This one's a keeper. Made them for an office luncheon & everyone wanted the recipe. Made a couple small adjustments to the recipe... substituted 1 cup of the flour for 1 cup whole wheat flour and added nutmeg to the spices. More or less doubled the frosting (more cream cheese & less butter) and added a dash of nutmeg & salt each.

Sent this to my boyfriend's family for Thanksgiving, and it's a keeper! Instead of cream cheese, which I think is disgusting, I used just plain vanilla frosting. Still very yummy! This was a great desert. It was not a heavy desert, so it was great for after a heavy turkey dinner.

omg so good! i didnt even put the frosting on it. didnt feel it needed it, it was that good! freezes very well...thawed out on counter with in 15 20 min and tasted just as good as it did when i pulled it out the oven a couple weeks prior!!

Delicious and a great way to bring in the fall season. The cake was moist and the topping smooth and complimentary to the cake. I say cake and not "bar" because I cooked this in a 9x13 pan and the result was more cake than bar. I just had to cook it longer than the stated 30 minutes. Mine was in the oven for about 40 minutes. I will for sure be making this great recipe again.

The bars are tasty, however, I did not have enough icing to cover a 15X1X10 bar pan. I following the directions exactly as stated. I purchased enough ingredients to make a second batch so this time, I'll make a little more icing. I didn't have plain cinnamon but I used Cinnamon Plus (from a direct sales company.) Since Cinnamon Plus already contained cloves and ginger, I omitted them in the recipe.
