Ingredients

  • 2 cups diced cooked ham
  • 1 cup barbecue sauce
  • 1 medium onion, chopped (1/2 cup)
  • 1 can (15 to 16 oz) great northern beans, drained, rinsed
  • 1 can (15 oz) Progresso™ dark red kidney beans, drained, rinsed
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 2 pouches (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
  • 2/3 cup milk
  • 1/4 cup butter or margarine, melted
  • 2 eggs

Steps

  • 1
Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • 2
In 3-quart saucepan, heat ham, barbecue sauce, onion and beans over medium-high heat, stirring occasionally, until thoroughly heated. Pour into baking dish.
  • 3
In large bowl, stir 2 pouches muffin mix, milk, butter and eggs just until moistened (batter will be lumpy). Spread over ham and bean mixture to edges of dish.
  • 4
Bake uncovered about 20 minutes or until toothpick inserted in center comes out clean and cornbread is golden brown.

  • You can purchase diced cooked ham in 1-pound packages. Refrigerate or freeze the rest of the ham for another meal.
  • If you like, sprinkle your favorite shredded cheese over the top of the baked casserole and bake 2 to 3 minutes longer until the cheese is melted. Try Cheddar or Colby-Monterey Jack cheese blend.
