Ham and Three-Bean Bake

Ingredients

cups diced cooked ham
1
cup barbecue sauce
1
medium onion, chopped (1/2 cup)
1
can (15 to 16 oz) great northern beans, drained, rinsed
1
can (15 oz) Progresso® dark red kidney beans, drained, rinsed
1
can (15 oz) Progresso® black beans, drained, rinsed
2
pouches (6.5 oz each) Betty Crocker® cornbread & muffin mix
2/3
cup milk
1/4
cup butter or margarine, melted
2
eggs

Directions

  • 1 Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • 2 In 3-quart saucepan, heat ham, barbecue sauce, onion and beans over medium-high heat, stirring occasionally, until thoroughly heated. Pour into baking dish.
  • 3 In large bowl, stir 2 pouches muffin mix, milk, butter and eggs just until moistened (batter will be lumpy). Spread over ham and bean mixture to edges of dish.
  • 4 Bake uncovered about 20 minutes or until toothpick inserted in center comes out clean and cornbread is golden brown.

You can purchase diced cooked ham in 1-pound packages. Refrigerate or freeze the rest of the ham for another meal.

If you like, sprinkle your favorite shredded cheese over the top of the baked casserole and bake 2 to 3 minutes longer until the cheese is melted. Try Cheddar or Colby-Monterey Jack cheese blend.

This was very good! But who doesn't like ham,beans,onions,bbq sauce,cornbread and cheese. Next time I'll bake the cornbread separate though. I find that when recipes call for cornbread or biscuits to be baked on top of something it doesn't bake as well.

Wonderful!! For easier preparation, I used a large oven-safe skillet to heat the ham, sauce and beans. Then, I prepared the muffin mix and spread it on top and popped it into the oven. It eliminated one dish that needed to be cleaned after dinner. We'll be seeing this again...and soon.
