I used a red bell pepper in place of the onion since we don't enjoy onions, and that was the best part of the whole thing. I was not impressed by this recipe - a very uninteresting way to make ham taste like cornbread. Suggestions would be to double the ham because it was overpowered by the corn flavors. I would also add some more bell peppers, and the mushrooms as suggested by another reviewer - anything to add more texture and crunch. Maybe include a can of mild green chilis? Not amazing as is, try something else.

Not impressed at all, used less bisquick and added a little milk, so it would not be much like "bread", may explain why it was mushy. I rely on betty crocker alot, but this is a throw back. Better luck next time.

It was good, but mine turned out to be more of a "bread" texture than casserole. It still tasted good and would be great with chili or other kind of soup.

This was a very tasty quick and easy recipe. My family enjoyed it quite a bit. I think next time I will use Mexican blend cheese and some green chilies to give it a little kick.

Pretty good. We used leftover pork tenderloin and had to make creamed corn from a can of corn because our on-hand can disappeared but it worked out great. A bit on the bland side - it needs a little something. Hot sauce...salsa maybe.

I made this for the first time this weekend. I made some changes,I added twice as much ham and I finely chopped about 3 mushrooms (didn't want to make it soggy with liquid from mushrooms),I added a small can of Ortega diced green chilies and I used a combination of Mozzarella cheese and the grated Mexican blend, since it was what I had on hand, I didn't really mesaure just added a couple of big handfuls. I still used the onions and all other ingredients as called for. It was so good, my family couldn't stop eating it. My daughter said this would be good as a breakfast casserole too, and I agree. I think because of adding so many extra things it seemed to bake quicker, I set the timer for 40 minutes and it was done by then.
