Ham and Cheese Tortilla Roll-Ups

Ingredients

cups shredded Cheddar cheese (6 ounces)
1/4
cup mayonnaise or salad dressing
1/4
cup sour cream

can (11 ounces) Green Giant® SteamCrisp® Niblets® vacuum-packed whole kernel corn or Mexicorn® SteamCrisp® whole kernel corn with red and green peppers, drained

Old El Paso® flour tortillas (6 inches in diameter)

slices (1 ounce each) deli fully cooked ham
Cilantro sprig, if desired

  • 1 Mix cheese, mayonnaise, sour cream and corn.
  • 2 Top each tortilla with 1 slice ham. Spread 2 tablespoons corn mixture over ham. Top with cilantro. Roll up.

Roll ups are great! When available, I try to get a high-fiber or whole wheat tortilla. The recipe from Betty is a little high fat already, but sometimes is use cream cheese as "glue" hold my roll ups together. (Cram 'em full of veggies like raw spinach!)

I just did this with my toddler''s day care class. about 25 ages 3 - 5. They LOVED it. They each got to measure the ingredients for their own sandwich and build it themselves. I did slightly modify the recipe for cost and convenience. I replaced the corn with shredded Carrots and Broccoli. We used slice turkey instead of ham and lettuce instead of celantro. They gobbled it up, and came back for more. You would have thought they hadn''t eatten in days. I gave them each a copy of the recipe to take home.
