Roll ups are great! When available, I try to get a high-fiber or whole wheat tortilla. The recipe from Betty is a little high fat already, but sometimes is use cream cheese as "glue" hold my roll ups together. (Cram 'em full of veggies like raw spinach!)

I just did this with my toddler''s day care class. about 25 ages 3 - 5. They LOVED it. They each got to measure the ingredients for their own sandwich and build it themselves. I did slightly modify the recipe for cost and convenience. I replaced the corn with shredded Carrots and Broccoli. We used slice turkey instead of ham and lettuce instead of celantro. They gobbled it up, and came back for more. You would have thought they hadn''t eatten in days. I gave them each a copy of the recipe to take home.

I do these all the time with my clan, they go over well and there are so many choices for the kids. I use a wheat shell for added flavor and nutrition.

This recipe is very good all except for the cilantro my son doesn''t care for it much or his friends. I love getting recipes from your website for my son and all his friends for there after school snakes. Thank you for the opportunity to do so.
