Ham and Cheese Tortilla Roll-Ups (lighter recipe)

You have ever-so-easy Southwest flavor going when you make a creamy cheese and corn filling that you wrap up with ham slices and flour tortillas. Plus, this recipe uses lower-fat dairy ingredients that save you calories and cut the fat of the traditional version nearly in half.

Ingredients

1 1/2
cups reduced-fat shredded Cheddar cheese (6 ounces)
1/4
cup reduced-fat mayonnaise or salad dressing
1/4
cup fat-free sour cream

can (11 ounces) Green Giant™ SteamCrisp® Niblets® vacuum-packed whole kernel corn or Mexicorn® whole kernel corn with red and green peppers, drained

fat-free flour tortillas (6 to 8 inches in diameter)

slices (1 ounce each) deli fully cooked ham
Cilantro sprig, if desired
  • 1 Mix cheese, mayonnaise, sour cream and corn.
  • 2 Top each tortilla with 1 slice ham. Spread 2 tablespoons corn mixture over ham. Top with cilantro. Roll up.

Expert Tips

Get on a roll! Soften tortillas as directed on the package for easier rolling.

In place of the Cheddar, another time you could use Monterey Jack or one of the newer shredded Mexican cheese blends available in most supermarkets.
