I used shredded Mexican Blend cheese (since I didn't have cheddar on hand) and added some chopped orange bell pepper (since it was about to go bad in my fridge). I also used a package of 6 FlatOut Flatbread Wraps instead of 10 tortillas, so they turned out larger and with lots of fiber and protein. I served with chips and salsa, and it was a great, quick recipe using ingredients that I usually have on hand (and, clearly, easily adjustable)! Great for between grocery runs.

I really liked these, and so did my family. I served them on a busy night when I didn't have much time to devote to preparing a big meal, and it turned out great. The recipe was easy to follow, and there was no real cooking other than what little effort it takes to put the Roll-Ups together. They were quite tasty and filling, and they went well with the spinach strawberry salad I whipped up to go with them. I think I might experiment next time I make these and try using fresh spinach leaves instead of sprigs of fresh cilantro. I read some of the other reviews before making them, and I rolled the bottom of the tortilla in (just for my kids) so the corn wouldn't fall out. Turned out that it wasn't really necessary because my husband and I didn't have a problem with the corn falling out of our Roll-Ups.

I quite liked these. It was easy to prepare and very filling. The corn could slip out and get a bit messy...maybe mashing it up before adding it to the rest of the meal would help do away with that.

I very lightly toast the tortilla first, then add ingredients. Also, we add either minched jalapeno or chilies for an added "bite".

I made this recipe at school and one of my classmates spit it out. A few others tried the Roll-Ups and liked it. I also took it around to some of the school''s staff and they liked it. So I went home and made it again for the family and they actually enjoyed it. For me myself I didn''t think it was to bad at school, went I made it for the second time it taste a little better, but my taste buds says that there is something missing. I haven''t quit figured it out yet.
