I was disappointed with these muffins because they were too bread like and dry. I'm going to make them again and add pineapple to hopefully moisten them, Perhaps a shorter cooking time also. I like the idea of a quick grab and go breakfast muffin though.

I was really excited about making these but didn't turn out as good as I had hoped! They were easy to put together but too dry and bread-like. I added some milk as recommended by other reviewers but that didn't make a lot of difference. Time to try a different recipe.

Made these for the first time.. they were on the dry side, almost like a tes biscuit. if i ever make them again i will definately add more milk and cheese to moisten them up.

I FINALLY made these and the guys love 'em! I did add some extra ham and cheese and a bit of cayanne and cracked pepper, very tasty. Grab a banana and you have a saucy little breakfast on the run.

Okay, now this isn't ham and cheese muffins, but that's only because I subbed in turkey bacon this time. I made the ham and cheese muffins last week as an easy on the go breakfast. I used ham and cheese and I also sauteed some veggies and added them. Still dry and a little bland. This week, I subbed turkey bacon and upped the amount of veggies added. I sauteed in butter: half an onion, a bell pepper, 1/2 a medium tomato and the yield of one ear of corn. I made the mix and let it sit, per other reviews. Then I folded in the cheese, bacon and sauteed veggies. By the time I mixed it all in, I would say I had almost and equal amount of batter to add ins. These do need to cook a little longer. They are pretty moist, but I like the flavor immensely. I may even think of adding more veggies next time.

These are really good, Light, and fluffy. However, I thought they were a little on the dry side. I would still make them again. Changes I made: I used whole milk (I usually use fat free), I mixed all wet ingredients first then added dry mixed it all up and let it sit while I graded cheese and cut the meat. I added extra cheese and we didn't have any ham so I used lil' smokies and bacon.

My family and I tried these a while back. They were dry, fell apart too easily, and didnt have flavor. Won't be doing these again. Maybe we'll try them a different way.

These muffins are flavorful and delicious. Here's what I do: use buttermilk instead of regular milk, use SHARP cheddar cheese, and use green onions or minced onion, about 3 to 4 tablespoons. I also saute' the diced ham with the onions. I stir together the muffin batter while the ham is sauteing, that way the batter begins rising and the muffins are lighter. I also probably put in more than 1 cup of cheese, more like a cup and a half.

These muffins are really good and easy to make. I suggest increasing the baking time to 22 to 24 min. I substituted buttermilk for the regular milk and I added 1 tsp. of garlic powder. One of these with some fresh fruit would make a good quick breakfast.
