Okay, now this isn't ham and cheese muffins, but that's only because I subbed in turkey bacon this time. I made the ham and cheese muffins last week as an easy on the go breakfast. I used ham and cheese and I also sauteed some veggies and added them. Still dry and a little bland.
This week, I subbed turkey bacon and upped the amount of veggies added. I sauteed in butter: half an onion, a bell pepper, 1/2 a medium tomato and the yield of one ear of corn. I made the mix and let it sit, per other reviews. Then I folded in the cheese, bacon and sauteed veggies. By the time I mixed it all in, I would say I had almost and equal amount of batter to add ins. These do need to cook a little longer. They are pretty moist, but I like the flavor immensely. I may even think of adding more veggies next time.
