Ham and Apple Pancakes

These hearty pancakes already have ham in them, so there is no need to cook up anything additional on the side.

Ingredients

  • 1 can (21 ounces) apple pie filling
  • 2 cups Bisquick™ Original baking mix
  • 1 cup milk
  • 2 eggs
  • 3/4 cup diced fully cooked ham
  • 1/2 cup shredded Cheddar cheese (2 ounces)
  • 1 medium green onion, sliced (2 tablespoons), if desired
  • Cinnamon, if desired

Steps

    Heat pie filling until hot; keep warm.

    Heat griddle or skillet over medium heat or to 375°. Grease griddle with margarine if necessary. Beat baking mix, milk and eggs with wire whisk or hand beater in large bowl until smooth. Fold in ham, cheese and onion.

    Pour batter by scant 1/4 cupfuls onto hot griddle. Cook until edges are dry. Turn; cook until golden brown. Serve with warm pie filling; sprinkle with cinnamon.

    If you're feeling just a tad adventurous, consider livening up the pancakes by adding 1 tablespoon Dijon mustard to the batter in step 1.
