Ground Beef Stew over Garlic Mashed Potatoes

Ingredients

lb lean (at least 80%) ground beef
1/4
cup chopped onion
1
cup Green Giant® Valley Fresh Steamers™ frozen mixed vegetables
1
can (14.5 oz) diced tomatoes, drained
1
jar (12 oz) beef gravy
1/4
teaspoon dried marjoram leaves
1/4
teaspoon pepper
1 1/3
cups water

tablespoons butter or margarine
1/2
teaspoon garlic salt
1/3
cup milk
1
cup Betty Crocker® Potato Buds® mashed potatoes (dry)
1
tablespoon chopped fresh parsley

  • 1 In 12-inch nonstick skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.
  • 2 Stir in mixed vegetables, tomatoes, gravy, marjoram and pepper. Heat to boiling. Reduce heat to low; simmer uncovered 8 to 10 minutes, stirring occasionally, until vegetables are tender.
  • 3 In 2-quart saucepan, heat water, butter and garlic salt to boiling. Remove from heat. Stir in milk, dry potatoes and parsley just until moistened. Let stand about 30 seconds or until liquid is absorbed. Fluff potatoes with fork. Serve beef mixture over potatoes.

This was a bit bland. I added some extra salt & pepper as well as I used 1 jarred beef gravy. I have 2 VERY picky eaters and I was shocked and so happy with the lack of "What is this?" and "Do I have to eat this?" Thanks for the help on this. I loved how easy this was. I have to say I expected this to make a bit more than it did. I used 3 LB chuck, 1 28 oz can pet, diced toms, as well as 3 packets of beef gravy. 2 full bags of veggies.

Very colorful dish, but bland. Looked like it would taste better than it did. Not awful, but it definitely needs more flavor. I didn't think the diced tomotoes were good in this recipe either. It was basically a shepards pie. I like the pototoes though. I think they came out better using the directions in this recipe than the directions on the box.

This recipe is great as a filling for pot pie. Added 2 T flour. Used refrig. crust. Baked bottom crust about 15 min at 375 until almost browned. Filled and put on top crust. Baked at 375 for 30 min. until browned. Very pleased.
