Grilled Zucchini Ribbon Roll-Ups

Blogger Brooke McLay from Cheeky Kitchen prepares a beautiful grilled zucchini roll appetizer in less than half an hour. They’re perfect for a party!

small zucchini
tablespoons olive oil
Salt and pepper to taste
cup garlic-and-herbs spreadable cheese (from 4- or 6.5-oz container)
cup small cherry tomatoes
  1. Cut zucchini into long thin ribbons. Drizzle with oil; sprinkle with salt and pepper.
  2. Heat grill pan over medium heat. Add zucchini ribbons. Cook until golden-brown grill marks form on both sides. Remove from pan; cool completely.
  3. Spoon about 1 teaspoon cheese on top of each cherry tomato. Wrap zucchini ribbon around tomato and cheese; secure with toothpick.
