Grilled White Chicken Pizza with Caramelized Sweet Onions

Grilled pizza is surprisingly simple. Try this tomato-free version with sweet onions, deli rotisserie chicken, Alfredo sauce, and refrigerated pizza crust.

Ingredients

tablespoons butter or margarine

cups halved thinly sliced sweet onions

teaspoon sugar
1
teaspoon fresh thyme leaves

oz cream cheese
1
package (14 oz) prebaked original Italian pizza crust (12 inch)
1/3
cup refrigerated Alfredo pasta sauce (from 10-oz container)
1
cup shredded deli rotisserie chicken (from 2- to 2 1/2-lb chicken)

  • 1 In 10-inch skillet, melt butter over medium heat. Cook onions and sugar in butter 20 to 25 minutes, stirring frequently, until deep golden brown and caramelized; stir in thyme leaves.
  • 2 Heat gas or charcoal grill. Spread cream cheese evenly over pizza crust. Top with Alfredo sauce, shredded chicken and onions. Place on grill over medium-low heat. Cover grill; cook 8 to 10 minutes or until hot.

Yumm - I adore carmelized onions. I made this the first time according to directions and it was delish. I have since made it with ranch dressing or caesar dressing instead of alfredo sauce and it was great. I think any creamy dressing would work. I have also added chopped apple, roasted red pepper, pepper jack cheese, bacon, mushroom etc. Just the idea of the cream cheese and a creamy sauce is a good base for any toppings. I have used canned crust and box mix crust too-just prebake them about 10 minutes before trying to spread the cream cheese. I usually use the oven, too cold and snowy to grill all the time.

This is a fav for our family now- we have it atleast twice a month and everyone enjoys it! I've known several people that don't like onions that thought this was amazing. Plus it's a great way to get rid of leftover chicken!
