Make crusty turkey-and-cheese panini with an Italian edge thanks to artichoke hearts and a schmear of pesto mayo. Try it as a surprising new use for those turkey leftovers!

This was a great sandwich! I skipped the artichokes (they're not my favorite, and I knew my kids would never eat it)and added pre-cooked bacon. They were wonderful! The pesto mayo really made the sandwich. I made extra to put on sandwiches for the rest of the week. Served with canned tomato soup and, ta-dah! A quick, easy week-night supper! Yum!

Loved it! This was an excellent sandwich. I don't care too much for artichokes, so I left them out. Can't wait to make it for my husband. It was quick and easy.
